Meatloaf

 

Veggie Loaded Meatloaf

Kids Eat in Color

Ingredients:

2 tsp oil

1/2 large onion, diced

2 clove garlic, minced or 1/2 tsp garlic powder

3 carrots, peeled & diced

1/2 green bell pepper, chopped

1 (13.5 oz) can spinach, drained and squeezed dry

16 oz ground beef

1 tsp black pepper

1 tsp cumin

2 eggs

1/3 cup ketchup or tomato sauce

1/3 cup oats or breadcrumbs

1/4 tsp salt

Directions:

1. Preheat oven to 375

2. (Michelle skips this step and just throws veggies in the food processor, then into the meat

mix) In a large skillet on medium heat, heat oil. Add veggies and cook until soft and liquid has

evaporated, about 8-10 minutes. Remove pan from heat.

3. In a large bowl, combine beef, seasonings, egg, ketchup, and oats. Mix well.

4. Add cooked veggies to bowl and mix well.

5. Spray oil on nonstick baking sheet or bread pan. Shape meatloaf mixture to a bread loaf form

and top with half of sauce (below).

6. Bake 45 minutes, until cooked through or to 165 degrees internal temp.


Meatloaf Sauce

1/2 cup ketchup

1 tsp mustard

1/4 cup brown sugar

1/4 tsp nutmeg (not optional!)

Directions:

  1. Mix. Put half on top of meatloaf before baking. Reserve rest for serving.
