Chocolate Chip Muffins (with Zucchini)

Yield: 12 muffins
Ingredients:
1 ⅔ cup buckwheat flour (or other flour)
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
½ teaspoon salt
½ cup milk of choice
1 large egg
½ cup maple syrup or honey
¼ cup neutral oil
1 teaspoon vanilla
½ cup chocolate chips
2 cups shredded zucchini (squeezed in a towel to remove extra liquid)
Method
Preheat oven to 350 degrees F / 175 degrees C. Prepare muffin tins by greasing or using papers.
Mix dry ingredients together (flour, baking powder, baking soda, cinnamon, salt) in a bowl.
Mix milk, egg, maple syrup, oil, and vanilla. Wisk. Pour into dry ingredients.
Stir just enough to incorporate the wet and dry ingredients.
Stir zucchini and chocolate chips into the the batter.
Spoon into the muffin tin.
Baking for approximately 16. They are done when you insert a toothpick or knife into the center and it comes out clean.
